Macadamia Nut Snack Bar Recipe

Whether you’re trying to eat more healthily or trying to keep your children’s sweets intake to a minimum, macadamia nuts are a great snack to last you throughout the busy day. With high levels of protein and no significant carb-content macadamia nuts have no effect on blood sugar levels, they help to keep that full-feeling for longer and keep you from indulging in more sugary snacks. This quick, easy to make recipe will help you or your children to resist temptation for crisps and sweets.

What you need:
45g dried apricots
90g dried apples or pears
90g dried figs
50g macadamia nuts
50g sunflower seeds
60g wholemeal flour (for a wheat free snack, add 100g of oats and cut the flour out)
60 g porridge oats
60ml orange or apple juice
3 tablespoons of honey
How to make:

1. Place all dried fruit in a blender and roughly chop before stirring in the seeds, nuts, oats and flour

  1. Next, add juice and honey and roughly blend
  2. Place mixture in a greased shallow baking tray to cook at 190 C/375 F/gas 5 until golden brown – about 20 minutes
  3. Leave to cool and then slice into bars
If you just can’t stay away from chocolate, then melt some high-quality chocolate over a pot of boiling water and dip the top of your bars in the semi-cooled off chocolate. Let dry and refrigerate for a few minutes to make sure the chocolate is set.
